Healing Raw Veggie Cold Pasta

 Healing Raw Veggie Pasta (cold)


·        1 sm zucchini spiraled ( zoodled)**Add more if want to use less Chinese noodles

·        2 medium carrots shredded

·        1 pkg prepared all natural Chinese style fresh noodles ( udaya) or prepared spaghetti noodles or spaghetti squash

·        8 sm radishes thinly sliced

·        ½ red bell pepper thinly sliced

·        1 sm skinned cucumber. Cut in quarters then thinly sliced

·        1 rib celery diced

*** optional*** Add baked tofu, chopped peanuts, cooked shrimp, cooked pork, cooked chicken, or cooked steak. Feel free to add more veggies to your liking.

For the Sauce:

·        Juice of 1 lime

·        1 in section of ginger root grated

·        4 cloves of garlic minced ( more if desired)

·        2 tbsp. Tamari soy sauce or liquid aminos

·        1 ½ tbsp. chili paste

·        Dash of pepper

·        Dash of dried mint ( or can used minced fresh)

·        ½ ounce fresh cilantro

·        ½ ounce fresh basil

·        2 tbsp. olive oil

·        ¼ tsp of raw sugar ( or use stevia or honey to your sweetness liking)

·        Dash of fish sauce (1/8-1/4 tsp) to taste



Prepare pasta as directed on pkg. Set aside. Spiral, chop, cut, and grate all other veggies (feel free to add them all to one big bowl or pot). Prepare the sauce in separate bowl. Mix all sauce ingredients together adding more seasoning if desired (more chili paste or garlic for more spice- more herbs and lime for a fresher dish)

Add noodles to bowl with veggies. Toss. Add sauce slowly tossing as needed. Serve cold/room temp.  ** If adding tofu/nut or meat feel free to add on top of pasta or toss with it.

*My favorite with this is dish a side of shelled shrimp cooked in coconut oil, garlic, cayenne, and lime juice. Enjoy!
